Aspic with ham
- A good wash, cover with water and leave for a few hours 8 pork legs, 4 ear, 2 tongue.
- To lay all in a large saucepan, add 200 g of pork fat, cover with cold water, bring to a boil and cook over low heat until until the meat easily falls off the bone (3 — 6 hours).

- When the meat is ready, take it out, separate from bones and chop, strain the broth.
- To the meat add 400 g chopped cooked ham, mix, add salt.
- Sort cruets and forms, pour the broth and put it in the refrigerator to harden.
- To prepare the marinade, mix the half Cup 3% vinegar, 10 g of horseradish, 2 cloves crushed garlic, salt, ground black pepper, prepared mustard, to taste.
- Serve the jelly with the marinade.
Pork jelly spicy
- Fold in a large pot chipped and cleaned pig’s head, 750 g bones, 400 g of pulp, place 2 parsley root and celery, 2 heads of peeled onion, a dozen peas black pepper, cover with water and put to boil.
- After boiling, cook on low heat until the meat easily falls off the bone (3 – 6 hours), do not forget to remove the scum.
- Half an hour until ready, drop 2 peeled carrots, a few Bay leaves.
- When ready, remove the meat from the bones, chopped, and the soup to drain through a sieve.
- To the meat add finely chopped 4 – 5 pickles, some pickled mushrooms, and chopped cooked carrots, add salt and pepper.
- To lay the forms and pour the broth, put it in the refrigerator to solidify.
- Take the largest, weighing about 2 kg chicken, cut it into large pieces and 4 legs placed in a large pot, pour 4 liters of water, set on fire
- Bring to a boil, unforgettable remove the foam, add salt, parsley root, one peeled onion, one carrot medium-sized, 5 – 6 peas of black pepper, Bay leaf.
- Cook on slow heat for 4 to 5 hours, until the broth will not be in half, removing the foam and fat.
- Separately, boil another carrot for decoration and cut it into slices.
- When ready, take out the meat, cut it into small pieces, the broth is filtered.
- Pieces of meat laid out in the forms, pour the broth, decorate with carrot and leave to harden.
- Jelly will be even tastier if you add some meat of a wild duck.
