Meatballs in tomato sauce, panzanella with chicken pot pie and other Goodies that are well worth a try.

1. Crispy chicken with baked potatoes and vegetable salad

  • 2 lemon;

Wash well the potatoes and cut into slices. The potatoes and one lemon, put in a saucepan with boiling salted water for 4-6 minutes. Then drain potatoes in a colander, shake a little and leave for a few minutes to drain excess liquid. Boiled lemon will come in handy later.

RUB the bird with olive oil, salt and black pepper. Sprinkle the chicken with the juice of half a fresh lemon and stuff it with lemon halves.

Preheat the oven to 180 °C and put the chicken on the grill breast down. The fat is mostly at the back of the bird, so in this position it evenly distributed throughout the meat and keep it juicier. Under a grill, place the baking sheet: it will drain excess fat.

The chicken will bake in approximately 1.5 hours.

2. Chicken meatballs in tomato sauce

  • 3 slices of brown bread without crusts;

  • 50 g of olives;

Grind in a blender with softened bread, olives, capers, a clove of garlic and Parmesan. Add the sliced chicken and raw egg and again all grind. The texture should be homogeneous, enough, to this mixture you can roll into balls.

Season the stuffing with salt and black pepper. Make it small balls about 2.5 cm in diameter. If the stuffing turns out watery, add bread crumbs.

Grease a baking dish with oil and place meatballs in it. Drizzle with olive oil and place in a preheated 180 °C oven. After 15 minutes, turn meatballs, so that they are evenly covered with a Golden crust, and bake for another quarter of an hour.

While preparing the meatballs, make the tomato sauce. Pour into a saucepan 2 tablespoons of olive oil, put on medium heat and fry 3 cloves of minced garlic until it slightly softens.

Add to garlic, the pulp of the tomatoes. By the way, it can be replaced with tomato paste. To get from the banks all the pasta, just pour a little water, stir and pour into a saucepan.

3. Chicken salad, bacon and sun-dried tomatoes

  • 6 chicken thighs without skin and bones;

  • 2 tablespoons olive oil;
  • 2 tablespoons balsamic vinegar;

Cooking

Cut the tomatoes into quarters. Peeled onions cut into rings. Clean the peppers from seeds and cut into pieces. Using a knife, slightly flatten the unpeeled garlic.

Cooking

RUB the chicken with sea salt, pepper and olive oil. Stuff the carcass with herbs. Leave a little bit of rosemary, it will come in handy later.
