Ossobuco is a dish of Italian cuisine made from veal shank. The peculiarity of the recipe is that the shank is cut into wide slices along with the marrow. The meat turns out to be incredibly tender and juicy, but the lentil garnish will especially emphasize its taste.
- 350 g veal shank;
- 100 g carrots;
- 100 onions;
- 100 g celery root;
- 20 g flour;
- 20 ml olive oil;
- Bay leaf;
- 100 g lentils;
- 50 ml cream;
Cut onion, celery and carrots into large pieces. Cut the veal shank into wide slices, salt, pepper and roll in flour.
In a pan with heated olive oil, fry the meat slices on both sides.
Now we send all vegetables, peppercorns and bay leaves to the meat. Cooking the dish under a closed lid in the oven for 4 hours at a temperature of 180 ° C.
Boil the lentils for a side dish until tender, add salt, cream to it and whisk.
